1 Sliced of ribeye seared on a plancha with costra (seared mozzarella cheese), crispy potatoes strings, house made salsa, pickled red onions and cilantro on a fresh nixtamalized tortilla (local & organic heirloom corn)

Hand made nixtamalized tortilla with melted mozzarella cheese, cabbage, sauteed tomatoes, onions and cactus with cilantro. Finished with salsa and pickled onions.

Fresh corn dough is pressed into a thick, oblong shape—thicker than a standard tortilla but similar to a sope. Cooked on a hot griddle (comal), it features pinched edges and is layered with asiento (pork lard), refried beans, crumbled cheese, crema, cabbage and escabeche (pickled vegetables). (vegan upon request)
